Pasta With Avocado Sauce Recipe

Ingredients:

  • Pasta: 7 oz (around 200g) of your preferred type
  • Avocado: 1 small or 1/2 large, ripe
  • Basil: 1 cup loosely packed fresh leaves
  • Lemon: Juice and zest from 1/2 lemon
  • Garlic: 1 clove
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Olive oil: 1/4 cup
  • Pasta water: 1/2 cup (optional)

Instructions:

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Reserve about 1/2 cup of the pasta water before draining.

While the pasta cooks, combine the avocado, basil leaves, lemon juice zest, garlic, salt, and pepper in a food processor. Blend until smooth, stopping occasionally to scrape down the sides.

With the motor running, slowly drizzle in the olive oil until the sauce is creamy and well combined.

If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until it reaches your desired consistency.

Drain the pasta and return it to the pot. Add the avocado sauce and toss to coat evenly. Serve immediately, garnished with additional fresh basil leaves (optional).

Useful Tips:

For a richer flavour, add a tablespoon of nutritional yeast to the sauce while blending.
